Dehydrated White Onion
Frequently Asked Questions
Answers about quality, packaging, and export details for dehydrated white onion.
White onion powder is the export standard for most seasoning and processed food applications. It gives clean pungency without colouring the finished product, which matters in white sauces, soups, mayonnaise, coatings, and pale seasoning blends. Red onion powder carries a sweeter, milder profile and a pink to light brown tone that suits chutneys, ethnic blends, marinades, and products where the colour is welcome. Roughly speaking, if the colour of your finished product matters, choose white. If flavour character matters more than appearance, red is worth tasting. We supply both and will send comparison samples on request.
Our primary sourcing cluster is Mahuva in the Bhavnagar district of Gujarat, which is the centre of India's dehydrated onion industry and where the specialist processing capacity, varietal supply, and export experience are concentrated. Sourcing from the cluster rather than from opportunistic traders means better varietal consistency, established quality systems, and shorter chains between field and dryer. We visit processing facilities, qualify them against buyer requirements before listing them, and name the processing location on request for buyers who need supply chain transparency for their own audits.
This deserves a direct answer because the industry is often vague about it. Sulphur dioxide is commonly used in dehydrated onion processing to preserve colour and extend shelf life. It is permitted in most markets within declared limits and is entirely legitimate when disclosed, but it must be declared, it triggers allergen labelling above threshold in the European Union and elsewhere, and many clean label buyers will not accept it. We supply both sulphited and unsulphited onion powder. Every certificate of analysis states the sulphur dioxide result explicitly, whether the answer is a number or not detected. We will never ship an undeclared sulphited lot against a clean label specification.
Common export grades run from 40 to 60 mesh for a coarser granular powder through 80 to 100 mesh for standard powder, with finer milling available where your process requires it. Mesh choice is a genuine formulation decision rather than a preference. Finer powders disperse faster and suit instant and beverage applications but are more prone to caking and dust. Coarser grades flow better, resist caking, and suit dry blending lines. Tell us the application and we will recommend a grade, or match a sample you already run.
Pungency in onion is driven by sulphur compounds and is generally assessed through pyruvate content, which allows objective comparison between lots rather than relying on subjective tasting. Variety, growing conditions, and harvest timing all move the figure. Seasoning manufacturers running standardised recipes usually want a specified pyruvate range so their finished product tastes the same from batch to batch. If flavour consistency matters to your programme, tell us at enquiry stage and we will write a pyruvate range into the specification and report against it per lot.
Typical parameters are moisture below 6 percent, ash within agreed limits, particle size to your specified mesh, colour creamy white for white onion, and a strong characteristic onion aroma without scorched or musty notes. Microbiological limits, sulphur dioxide status, and heavy metals are reported per lot against your agreed specification. Onion powder is naturally high in microbial load because it is a soil crop, so realistic limits and an agreed treatment approach matter more here than on most products. We will discuss that openly rather than promising figures that would require an undisclosed treatment step.
Honestly, this is the question that decides most dehydrated onion contracts. Untreated onion powder can carry high plate counts. Steam sterilisation is the widely accepted route in European and North American programmes and does not require special labelling in most markets. Irradiation achieves similar results at lower cost but is restricted or requires declaration in several destinations and is rejected outright by many buyers. Ethylene oxide is not permitted in the European Union and we do not offer it. We will confirm which treatment, if any, has been applied to your lot, in writing, before shipment.
Up to 24 months from production in unopened original packaging stored below 25 degrees Celsius in dry conditions. Onion powder is hygroscopic and will cake and lose aroma if it takes on ambient moisture, so warehouse humidity is the practical constraint rather than time on the calendar. Store away from other aromatic materials, because onion powder both absorbs and imparts odour readily. For humid destinations we recommend a foil laminate liner rather than plain polyethylene, and we will specify it on the packing list.
Standard bulk packing is 25 kilogram multiwall paper bags with a food grade inner liner, palletised and shrink wrapped for container transit. We also supply fibre drums for buyers who want more robust protection, 20 kilogram cartons, and buyer branded retail and catering packs. Because packaging affects both landed cost and delivered shelf life, we will usually quote two options so you can see the trade off rather than defaulting to the cheapest format and discovering the consequence at destination.
Spice and seasoning blenders, snack seasoning manufacturers, soup and sauce producers, ready meal and frozen food processors, meat and marinade formulators, bakery and coating manufacturers, instant noodle producers, and hotel, restaurant, and catering distributors. India is a major global source for dehydrated onion, which means competitive pricing but also a wide quality spread. The difference between a good lot and a poor one at similar price is almost entirely down to processor selection and inspection discipline, which is precisely the work we do on your behalf.
Dehydrated onion, including powder, is generally classified under HS 0712.20, with Indian ITC HS line 07122000 commonly used. Classification can vary where the powder forms part of a compounded seasoning preparation rather than a single ingredient. Final determination rests with your customs authority at destination. We state the code on all shipping documents and will support your broker with process and composition detail if a ruling is required. Please confirm duty assumptions with your own customs adviser before pricing your programme.
Yes. We send a working sample free of charge with courier freight to your account, together with the certificate of analysis for that lot. For onion powder we recommend requesting both a sulphited and an unsulphited sample if your clean label position is not yet fixed, because the colour and shelf life difference is easier to judge in the hand than on paper. Samples typically dispatch within three to five working days of specification agreement.
Onion is a volatile agricultural commodity. Indian farmgate prices move sharply with monsoon performance, storage losses, and periodic government export policy interventions. We will give you a firm price against a defined validity window and a defined quantity, and we will not quote a fixed price for delivery months ahead of purchase, because a supplier who does that is either gambling with your programme or intends to renegotiate later. Where you need longer price certainty, we will discuss a forward purchase arrangement openly.
Send us the grade, mesh, sulphur dioxide position, destination port, and indicative annual volume, and we will return a realistic quotation with a stated validity period. Email connect@airacrest.com or message us on WhatsApp. We answer technical questions in full before asking for an order, because a buyer who understands what they are purchasing tends to become a buyer who stays.
